Scottish Highland Skirlie

Scottish Stuffing

Ingredients:

50g of butter or beef drippings for added flavour
1 med onion - finely chopped
175g Fine oatmeal (some will use a steel cut oatmeal like McCann’s Irish or Hamlyn’s Scottish pinwheel oatmeal) * * *
Salt and pepper

Optional:
4 oz. Grated suet can be added

Cooking Directions:
1. Melt the butter in a pan and add the onion, frying gently to soften.
2. Stir in the oatmeal, season to taste with salt and pepper and stir continuously while cooking gently for 10 minutes.
3. Serve with Stovies
