Scottish Highland Skirlie
Scottish Stuffing |

Ingredients:
50g of butter or beef
drippings for added flavour 1 med onion - finely chopped 175g Fine
oatmeal (some will use a steel cut oatmeal like McCanns Irish or
Hamlyns Scottish pinwheel oatmeal) * * * Salt and pepper
Optional: 4 oz. Grated suet can be added
Cooking Directions: 1. Melt the butter in a pan
and add the onion, frying gently to soften. 2. Stir in the oatmeal, season
to taste with salt and pepper and stir continuously while cooking gently for 10
minutes. 3. Serve with Stovies
