Old Country Cottage Breakfast Feast

List of ingredients (required per person)

1 large Celtic Treasure Chest Country Cottage sausage

2 rashers of CTC Ayrshire or Irish bacon

1 tomato, halved

1 tsp vegetable oil

1 medium egg

1 English Muffin, sliced in half

Butter paddy

1. Preheat the oven to a low heat and the grill to medium.

2. Put the sausage on the trivet in the grill pan and place under the grill, about 4-5cm from the heat. A large sausage needs to be cooked for about 20 minutes (smaller sausages need about 10 minutes), turning frequently with tongs.

3. After the sausage has been cooking for 15 minutes, add the rashers of bacon and tomato halves. Turn the bacon after 2 minutes. Remove the sausages and bacon, and keep them warm in the preheated oven on an ovenproof plate while frying the egg.

4. Heat the oil in the frying pan. Break the egg into a cup then add carefully to the hot oil. Fry for about 3 minutes until both the white and yolk are firm.

5. Toast the muffin in the toaster, then spread with butter.

6. Transfer the egg onto a plate and add the sausage, bacon and tomato.

7. Serve immediately with the toasted English muffin.
